This morning, I decided to experiment with my breakfast after reading an article on Ayurvedic breakfasts, which recommended a hot cereal and cooked vegetables or fruit to start the day. I found steel cut oats in my pantry, which will definitely fill you up and are less processed than instant oats.
To make 4 servings of this,
1. boil 4 cups of water
2. add 1 cup of oats
3. Leave the oats for 5 minutes in the boiling water
4. Turn the heat down and let simmer for about 30 minutes
(There will be more detailed instructions on the package)
It's really easy to make the apple topping. I threw several simple ingredients together and it turned out super yummy! It tastes just like apple pie filling, and without the added sugar.
1 tbsp coconut oil
Water up to 3/4 of the apple chunks' height (approx, just enough so they can simmer)
GENEROUS amount of cinnamon
A little bit of nutmeg
Cut the apple into chunks and put into a pot
Add the coconut oil ( it's ok if it doesn't mix in with the apple at this point, it'll melt once it's on the stovetop)
Add the spices and stir a little bit
Bring up to a boil for about 15 minutes and then lower the heat to let simmer for another 10 minutes, or until the apples are soft, stirring occasionally.
The end result is delicious! Keep in mind, I'm fairly careless with my cooking, so this is just an approximation. Feel free to adjust it according to your tastes, and don't worry too much about the measurements being perfect. I also suggest adding allspice if you have it, I think it would add a wonderful flavour.
When both the oats and apples were ready, I combined them into a bowl and enjoyed some green tea with it. It was soo good, I love a good bowl of oatmeal in the morning. Hope you enjoyed, have a great day everyone! :)
